Meatloaf Recipes and Ideas

It seems like every family has their own version of meatloaf. Maybe your grandmother always topped the beef loaf with tomato paste, or your mother insisted that ketchup was the way to cover the meat mixture before it went into the oven. These recipes include clever ideas to tweak this comfort-food favorite. For example, you can make quick and easy meatloaf muffins. Or what about using a leaner main ingredient – you can either try the turkey meatloaf or vegetable “meat” loaf. For maximum flavor, mix up the rolled Italian meatloaf or the hearty cheeseburger meatloaf. And as any meatloaf lover knows, the leftovers are almost better than when the dish has just come out of the oven!

My Favorite Meatloaf

This is the classic recipe for my favorite meatloaf from The Pioneer Woman. If you’re looking for the kind of dish your mom might have made, this is the one to try! Here, beef is mixed with Parmesan cheese, white bread, eggs and seasonings – then finished off with strips of bacon.

Quick and Easy Meatloaf Muffins

Mix up these quick and easy meatloaf muffins from Simple Daily Recipes using your food processor and just a few ingredients. Put away the baking dish and instead use a muffin tin pan to bake up these mini wonders.

Simple Turkey Meatloaf

Lighten up dinner with this simple turkey meatloaf recipe from Martha Stewart. Add diced onions and green pepper to the turkey to pump up the flavor of the meatloaf. Just like the standard version, this one’s last ingredient is a slathering of ketchup.

Rolled Italian Meatloaf

Sausage is paired with beef to create this new spin on the standard meatloaf. This recipe for rolled Italian meatloaf from Betty Crocker has cheese and spinach tucked inside and pizza sauce covering the outside.

Cheeseburger Meatloaf

You don’t need a bun to make this cheeseburger meatloaf recipe from Taste of Home! To make it taste even more like a cheeseburgers in each bite, dill pickle relish and mustard is added into the beef mixture.

Vegetable “Meat” Loaf

You don’t need any beef to make this vegetable “meat” loaf from Cooking Light. Bell pepper, mushrooms, asparagus, red onion, walnuts, basil and breadcrumbs make up this meatloaf – even the meat eaters in the house won’t complain with this rich, filling recipe.
