Sweet and Sour Pork Stir-fry

Was one of your New Year’s resolutions getting your family to eat a little healthier? Then time to load up on veggies and low-fat meats!

Asian stir-fries are the perfect answer to easy, healthy family meals (plus, they’re quick to prepare and your kids can help, to boot).

I still remember the first meal that I made for our family was a stir-fry. Along with chicken, I filled the wok with cut-up broccoli, onions, carrots, zucchini and green peppers. Frankly, it was a few too many veggies. Don’t get me wrong: Your stir-fry should be full of greens, but maybe not every one you have stashed in depths of your fridge’s veggie drawer. In other words, I’ve noticed that the best stir-fries use a couple different veggies and a protein.

My suggestion: Pair a couple vegetables with either meat or tofu. For example, in my sweet and sour pork stir-fry recipe, you’ll need bell peppers (I recommend red), green onions (although any onion will do) and strips of pork. If you’re looking to boost the veggie content, simply add more peppers and onions and less pork.

Now, you don’t need a wok to make this dish. A large skillet can be a stand-in. But if you’re planning on making stir-fries regularly, you might want to pick up a wok (they’re fairly inexpensive). Once you get the hang of making stir-fries, go ahead and try other flavor combinations. Maybe pick up a menu at your local Chinese restaurant and try to imitate some of their offered dishes!
